Eataly invites you to discover an original Slow Food presidium : the Giarratana onion. This onion is known for its incredible sweetness and unusual size, with a weight that can exceed 2kg. Cultivated in the heart of summer, the bulbs are left to dry in the open air, but they don't keep for a long period of time. This is why Fagone searched for a method that made it possible to enjoy these onions all year long, conserving them in glass , only adding sugar and lemon. Try the onion jam together with flavourful cheeses and boiled meat.
