The Bagnetto Rosso called bagnet ross in Piedmontese dialect, or red sauce, is a traditional recipe that uses freshly prepared ingredients: tomatoes, sweet peppers, onions, celery, extra virgin olive oil and spices. Traditionally prepared in late summer with the vegetables still available at the end of the season, it is one of the most representative sauces of the Piedmontese gastronomy. It is recommended together with boiled meats and game. The etymology of the name is also interesting: this sauce is used to 'bagna', or wet, the meat before eating it, to enhance its flavour.
