An icon among non-vintage champagnes, matured in magnum bottles for over 15 years in Bollinger's wine-cellars, and 85% made up of Grands and Premiers Crus aged for more than twice the length of time required by Denomination standards. Golden colouring, typical of black grape varieties, with superbly fine perlage, smooth as velvet. Fascinatingly complex bouquet: ripe fruit with allusions to roast apple, stewed apples and peaches, and subsequently pear, brioche and spicy aromatics with walnut undertones. On the palate it unfurls a subtle interplay of structure, persistence and verve.
