Zero Waste in 7 Steps

In 2016, we decided to organise some useful actions we could take to reach an important milestone into just seven steps, the milestone being the elimination of all waste production in our Eataly shops, as well as the transformation of waste into new opportunities through the launch of recirculation paths that can transform the waste into reusable items.

FIRST STEP: SEPARATE
We collect and differentiate everything in Eataly in Italy and around the world: in our kitchens, warehouses and public spaces, in collaboration with customers.

SECOND STEP: COMMUNICATE
Every Eataly has a waste manager who trains staff and proactively communicates with customers through our signage.

THIRD STEP: RECYCLE
Our organic waste becomes fertile soil. Objects are obtained from plastic, glass from bottles, boxes from paper. All our shops have containers for separate waste collection.

FOURTH STEP: REUSE
We reuse our materials. We prefer sustainable and recycled packaging, and encourage our suppliers to use them as well. We use biodegradable, reusable or recycled materials for all sales and catering functions.

FIFTH STEP: AVOID WASTE
We encourage customers to buy only what they need, without wasting. We cook local and seasonal products. We use simple and biodegradable packaging in all formats.

SIXTH STEP: CHOOSE
We choose products grown and processed with respect for nature and man. We choose suppliers who, in addition to quality and taste, have respect for the Earth, air, water and animals.

SEVENTH STEP: INNOVATE
In every phase of our work, from purchases to the warehouse, from preparation to sale, from cooking to consumption, every day we study new, simple and innovative solutions that are increasingly in harmony with the environment and with respect for human relationships.
