Acquacotta is a typical Tuscan dish, which represents the poor soup of coalmen and herdsmen. Its name, which means cooked water, could make you think of a light and flavourless dish, but acquacotta is actually a recipe with a full flavour, in particular of the various types of vegetables and various herbs used to make it. It is also a very nutritious product. According to tradition, scrambled or whole eggs should be added.
