The capers in oil from La Nicchia are made using the best Pantelleria capers I.G.P.
These small capers are selected from among the first harvested. They are then soaked in wine vinegar, dried and conserved in extra virgin olive oil. They lose a bit of their intense fragrance in favour of the oil, which also turns a bit green as it takes on the flavour and intense aroma of the caper.
Perfect when used in meat or fish dishes, but also to give a decidedly Mediterranean touch to pasta salads. These capers can be used directly from the jar together with their oil.
